Hello!

I’m Nicole, the heart and hands behind Nica Bakes.

Born and raised in Brazil, I moved to Australia almost a decade ago with little English and big dreams. I started out as a housekeeper, but my passion for pastry guided me to study, qualify, and gain years of experience as a chef.

Along the way, I had the incredible opportunity to work at renowned cake shops such as Cakes by Judy C. and the amazing Vanilla Pod, where I improved not only the art of cake decoration but also many lessons about life itself.

Today, I feel so proud to have opened my own business. Everything that comes out of my kitchen is truly homemade: from the jam, that I cook into a rich compote, to each cake, baked with real ingredients and genuine care.

For me, cakes are more than just desserts — they are edible art.

At Nica Bakes, I want every customer to feel that their cake was made with love. Whether you choose one of my signature designs or request something custom-made, every cake is created as if it were for myself or someone dear to me.
